Crockpot Chili

1 large onion, diced
2 celery stalks, chopped
1 cup chopped collard greens
1/2 cup quinoa
1 15 oz can chickpeas, drained and rinsed
1 15 oz can kidney beans, drained and rinsed
1 15 oz can black beans, drained and rinsed
1 28 oz can diced tomatoes
2  4oz cans green chile peppers
1 T chili powder
1 tsp garlic powder
1/2 tsp cumin
hot mexican chili powder, to taste
black pepper, to taste
salt, to taste
2 cups water

  • spray bottom of 4-6 qrt crockpot with cooking spray
  • place onion and celery in crockpot and turn on high for 30-45 min
  • add remaining ingredients, mix well
  • turn to low and cook for at least 8 hours
