Tomato Tortilla Soup

2 onions, chopped
1 head of garlic, minced
3 T soy sauce, plus one T water
1 26-28 oz can chopped tomatoes
1 4 oz can diced green chiles
2 tsp chilli powder
2 tsp oregano
2 tsp cumin
black pepper to taste
3 8 inch corn tortillas, chopped
2 cups vegetable broth
4 cups water
hot sauce, to taste

  • Saute onions and garlic in soy sauce and 1 T water until soft
  • Add tomatoes and chiles and saute for 10 min
  • Add spices and heat for another 5-10 min
  • Add broth,  water and tortillas and bring to a boil
  • Simmer for  about 1 hour
