2 large onions, cut into wedges

- place all veggies except garlic in a large pan
 - add spices and mix well
 - cut the ends of the head of garlic and wrap the garlic in tin foil, leaving one end open
 - spray open end lighlty with cooking spray
 - place garlic in the middle of the veggies
 - spray veggies lightly with spray
 - bake uncovered at 350 for 2 ½ hours
 - squeeze garlic out of peel, and mix into roasted veggies
