Everyone's Favorite Veggie Burger

1 onion
6 cloves garlic
2 carrots
1 yellow squash
1 zucchini
1 1/2 cups oats
1 1/2 cups flour
flax seed egg substitute
1 T soy sauce
  • Using a grater, shred all vegetables
  • Place grated veggies in a pot and cook on low heat until softened, about 15 min
  • Combine cooked veggies with all other ingredients 
  • Mix well, and refrigerate for at least 1 hour
  • Lightly spray pan or griddle with cooking spray and place over medium/high heat
  • Form burgers and cook for about five minutes on each side
