Easy Mexican Vegetable dish

2 26-28 oz cans chopped tomatoes
2 onions, chopped
2 cups frozen broccoli
2 cups frozen cauliflower
1 cup of frozen corn
1 cup frozen green beans
1 T chili powder
1 tsp hot mexican chili powder
1 tsp garlic powder
Salt and black pepper to taste

  • Saute onion in chopped tomatoes for 15 min, until onions are soft
  • Add spices
  • Continue to heat for another 5 minutes
  • Add remaining ingredients, mix well
  • Cover pot and cook over medium-low heat for 20 min
  • Serve over rice or pasta
