3 flaxseed eggs
1/4 cup cashew butter
2/3 cup mashed ripe banana
6 T maple syrup
3/4 cup applesauce
3/4 cup brown sugar
1 tsp salt
2 tsp baking soda
1 tsp cinnamon
1 cup almond milk
2 packed, heaping cups of grated carrots
1 1/3 cup oats
1 cup ground almonds
2 cups white whole wheat flour
1/3 cup chopped walnuts
1/3 cup chocolate chips (optional)
- Mix first 4 ingredients well, until smooth
- Add next 7 ingredients and mix until well-combined
- Add last 5 ingredients and mix well
- Divide into 2 muffin pans (makes about 18-20 muffins)
- Bake at 375 for 25 minutes
